Stay in Jeonju and participate in a Korean alcohol master’s program project based on the region’s unique resources. Participants explore the history and ingredients of Jeonju, gather inspiration needed for brewing, and develop their own traditional liquor recipes.Through the process of investigating and documenting various parts of the region, we create a special liquor that embodies Jeonju’s unique culture and stories. During the learning period, we observe the changes of fermentation produced by yeast as it lives and breathes, and we experience together the time it takes for the alcohol to mature.This course goes beyond a simple brewing experience; it is a time to learn the value of patience and the aesthetics of fermentation, explore new possibilities in gastronomy, and expand your own brewing sensibility and creative capabilities. An immersive journey of handcrafting and pouring the time of care into every piece. The brewing process offers the most special experience in your everyday life.

 

■ Main Activities

1. Education on the theory of brewing traditional liquor and highballs 

Learn the characteristics and production principles of various types of alcoholic beverages, such as makgeolli and cheongju. You will learn the principles of fermentation and aging, and discover the process through which each type of alcohol is made.

 

2. Understanding Raw Materials and Brewing Practice

Learn the characteristics of key ingredients used in making alcohol, such as rice, nuruk, and yeast, and participate directly in the brewing process. You will gain hands-on experience with the entire alcohol production process by working with a real brewer.

 

3. Developing Your Own Liquor Recipe

They think about what flavor and aroma to create in the drink and develop their own product concept. You will experience the process of understanding the ingredients and manufacturing methods, and making a liquor that reflects your own unique character.

 

4. Tasting and Evaluation of Results

We will have a time to taste the liquors developed by the participants together and exchange opinions. They develop recipes by sharing each other’s experiences and ideas.

 

■ Additional Information

  • This project is conducted with a combination of theoretical education and practical training at a brewery located in Jeonju.
  • You will learn the processes of fermentation and liquor production while experiencing the actual work of a brewer.
  • Additional material fees and extra costs may apply depending on the type and quantity of liquor produced.

Exploring and documenting Jeonju’s history and culture, as well as local ingredients, provides not only practical experience needed for brewing but also a time to discover the stories that go into the liquor. By understanding the stories embedded throughout the region and the characteristics of the ingredients, students plan and develop their own drinks that reflect their unique stories and personalities. Stepping away from the familiar everyday routine to spend time in a new space invites us to view the processes of fermentation and aging more deeply, while adding a modern sensibility and creative perspective to traditional liquor. Observing the changes created as the yeast comes alive and breathing, and sharing the time the liquor slowly matures, naturally teaches us the value of patience and the aesthetics of fermentation. Strolling slowly, enjoying the leisure, and connecting with local people will allow you to feel the true charm of Jeonju.

 

1. Jeonju Hanok Village

Jeonju Hanok Village, the representative attraction of Jeonju, is home to over 700 traditional Korean Hanok houses. Walking through the traditional architecture, you can experience Jeonju's culture up close by trying on Hanbok (traditional Korean clothes), tasting local food, and participating in craft workshops.

 

2. Gyeonggijeon Shrine

A historical site where the portrait of King Taejo Lee Seong-gye, the founder of the Joseon Dynasty, is enshrined. Tranquil forest paths and traditional architecture come together harmoniously, offering a peaceful space to take a stroll while gaining insight into Korean history and royal culture.

 

3. Jaman Mural Village

This is an artistic village with colorful murals lining every alleyway. Taking photos while slowly walking along the small streets allows you to feel a different side of Jeonju. Located close to the Hanok Village, it is a great spot to visit together.
